Love Mama Dut! So sad to see her shop closing but excited for what’s to come. Great read! As someone who’s been vegan 6 years I really love and appreciate your curiosity!
Thanks for reading Ash! I appreciate it. It was certainly interesting to learn more about Thuy and how she approached Vietnamese food, as from my experience there’s always a lot of meat involved lol
Hoang, this was such an interesting article about vegan Vietnamese food. Good on you. I am definitely not vegan but the photos of the sandwiches looked delicious! Definitely worth a try.
Italian food is great, but I have a deep passion for strong and unexpected flavours, and something tells me that those 'paninis' are just that. I lived in and travelled to a few countries in Southeast Asia in the past, and one of my biggest regrets is not having been able to sample all the typical dishes I saw in restaurants and markets. As a vegetarian, I am aware I miss out on a lot. So, I always get excited when I hear about projects like this, especially when they come from people who share the same background as the food they serve. Hope you have a great week, Hoang!
Great article, very well researched. I Especially like the images of the Vietnamese bánh mì sandwiches.

Thanks Sheri!
If only I didn't live on the other side of the ocean 😭 I'm drooling.
I know, right?! She made the foods look sooo good. But then again I think the foods you have in Italy is probably just as good if not better!
