Looks like you’re making good use of that stand mixer—and it does look beautiful, Hoang. I use mine all the time to knead dough for challah and cream butter and sugar for various cakes and cookies. I haven’t named it, however. I also find there are many things it’s just easier to mix by hand—like muffins, scones and pie dough. The cinnamon snickerdoodle snack bites are adorable. I think they might even be kosher for Passover—unless you’re very strict and avoid peanuts. Nice post!
I think they might be kosher too?? Not sure, but there are no peanuts :) just other good nuts. It's also another way I trick my kids into eating more nuts. Thanks for reading!
Whoops! My bad! I didn't read the recipe carefully and missed that you included almonds and cashews, not peanuts. But then, as I was already in that Passover wormhole (kind of where I live at this time of year), I looked up which nuts are kosher for Passover and read that only nuts in their raw state. Any "processed" nuts (i.e., salted, roasted, fried, whatever) aren't kosher for Passover unless certified as such. Peanuts are an even deeper wormhole that I won't go into. In my house, however, many things are just fine, even if not accepted by the devout. I do applaud your efforts to get your children to eat healthy nuts--and apologize for meandering completely off your topic!

Wow I didn’t know that processed nuts are not kosher either. You learn something new every day… 😃
